In celebration of launching my new book, Ice Floe, I’m sharing my favorite muffin recipe. These muffins du jour are vegan which makes them perfect for mermaids because, as we all know, mermaids are vegan. To be clear, Wilds aren’t vegan. Wilds are mermaids’ more aquatic counterparts who eat fish and seafood. True mermaids, however, refrain from meat, dairy, and seafood. Hence why I’m sharing these good-for-you yet still delicious baked goods from our friends at Forks Over Knives.

Pro tip #1: When cooking vegan muffins, it’s best to wear a mermaid-inspired apron. Your fun quotient increases exponentially and anything you cook automagically tastes better.

Pro tip #2: Not sure how you feel, but my eyes start to glaze over when a recipe has too many ingredients or gets too time consuming. Feel free to leave the cinnamon–nut crumble off the top of the muffins to save a few minutes. The final product is still super tasty!

Pro tip #3: I don’t bother making the “date paste” and instead throw 4-5 Medjool dates in the blender with the rest of the ingredients. Substituting whole dates rather than the paste saves a step. Make sure to take the pits out before adding to the blender!
